CLASSIC GREEK SALAD
A Refreshing Taste of Greece
Ingredients you will need:
2 cups cucumber, sliced 1 cup cherry tomatoes, halved 1/2 red onion, sliced 1/4 cup Kalamata olives 1/4 cup green olives 1/2 cup feta cheese, cubed 1 tbsp fresh parsley, chopped 1/4 tsp dried oregano Salt & pepper, to taste 2 tbsp olive oil 1 tbsp red wine vinegar
Prep the Vegetables:
Slice the cucumbers and red onion. Halve the cherry tomatoes. Cube the feta cheese.
Assemble the Salad:
In a large bowl, combine the cucumber, cherry tomatoes, red onion, Kalamata olives, and green olives.
Add the cubed feta cheese.
Season and Dress:
Sprinkle the salad with dried oregano, chopped parsley, salt, and pepper.
Drizzle with olive oil and red wine vinegar.
This of course can be customized anyway you want.
I like how the restaurants in Greece serve it with a single big piece of Feta, instead of cutting the Feta and mixing it into the salad.
The salad that is filled with most things I hated as a kid, but became my favourite salad as an adult.
I like to stuff this into a whole wheat pita, sometimes with Dijon or hummus or plain Greek Yogurt or tuna salad

Very convenient for quick preparation. When I was in a dorm and didn’t want to use the kitchen, I just bought a cucumber and tomato on my way home and chopped them in my room.
Basil also works well instead of oregano. Adds a lot of taste.
I also like to add either sour cream or low-fat mayo. And a bit of soy sauce.

I used to eat this for lunch once or twice a week because it was just so darn good. Mmmm. Add some chickpeas to stretch it out a bit!

Tied with vinaigraitte salad, because the latter is cheap to make in many regions.
Do you mean the Russian vinaigrette salad with boiled vegetables or some other variety? That word reminded me of a delicious and relatively lazy big batch dish I should make in weekend.
The Russian salad. Quick, cheap, and easy to make. Apparently the word originally means a sauce made from vinegar or lemon juice.
I think of vinaigrette as being the dressing.

That looks awesome. But aren’t those Persian cucumbers? I would think, given a few thousand years of history, that no Greek would put those in. I would. But I’m not Greek.
Far worse to me are the non-traditional green olives. Just… why?
You gots the Kalamata / Greek olives and you’re beyond good to go on the olive front…
Looks great! Way too much olives for my taste, but i‘d sort them out out and enjoy it anyway
