So I need to wait for it to cool down to extract the mussel, and shell the shrimp. And then I get to eat lukewarm paella. It bothers me to have to shell food that’s been cooked, but know not everyone is neurotic as me.
Have you had a mussel that the separated from the shell just by stabbing it and then picking it up? I’ve always had to hold the shell in place while doing so. Which gets the sauce on my hands, which is functionally not that different than peeling the shrimp that will “get my hands dirty”, at least in my mind. And I could manage it all just fine, if I wanted to, but clearly do not.

“Extract the mussel” you mean use a fork to pick the tender meat out of an open shell? I don’t know how you will manage.
