I just started one, but I don’t intend to make it sparkling. I canned some strawberry jam earlier this summer. Took a couple jars and couple pounds of honey. Well see how she does in a few weeks.

I’ve heard good things about this one. It’s on my list to make.

I often do a lemon and/or ginger sparkling mead for summer

Something with ginger and citrus is quite refreshing. Maybe some berries for a hint of color and flavor.
