One of the best lines of bullshit i ever tricked someone with was lentil related. It was a homie who id worked with at 3 differences at this point cause we’d keep getting the other one hired and we mutually enjoyed seeing if we could get the other to believe something made up. I said that lentils got their name from medieval times when lent was taken more seriously and only the simplest foods were allowed. And the foods which were allowed were casually referred to as lentils and the only staple lentil available was that crop. Completely made it up on the spot, told it with an absolutely straight face.
Start with asking somebody if they know that green peppers are just unripe yellow peppers. Some people know this but many don’t.
Follow up by asking if they know that green olives are just unripe black olives. A lot more people will be skeptical of this until you prove it to them.
Then you’re in the sweet spot, and you can assert that green lentils are just unripe red lentils.

I can never get into lentils. Needing to soak my food overnight requires a level of forethought and planning that I lack.
Lentils cook faster than basically any other legumes, you can whip up a pot in like 30 minutes.

like others have said, certain color lentils are actually “peeled” (red) so they way require less time.
also, the instant pot is a total game changer for dry goods, especially beans. it cannot be overstated.
its got a ton of accessory capabilities for culinary flourishes, but at it’s core it’s a high efficiency “smart” pressure cooker so you can turn even the most recalcitrant dry beans into thoroughly cooked magic in way, way less time.
dry kidney beans are like an overnight / 24 hour soak + 15 minute boil + 90 minute simmer conventionally.
dry kidney beans in the instant pot? 45-50 minutes total while you don’t have to pay any attention to it.
You don’t have to soak them though? Red ones are done after boiling like 20 minutes or less from dry, harder green and brown ones maybe like 40 or so.
Pressure cooker.
